Refreshing Dessert Recipes - Homemade Strawberry Yogurt, Cheesecake Ice Cream

If you are tired of pies, cakes, brownies, rich or heavy desserts, this article is for you. This is a collection of recipes for desserts like homemade ice cream, homemade yogurt, fruit dessert; tasty light ways to end your meals.
2 cups plain yogurt
2 cups pureed strawberries
1 can (14-oz) sweetened condensed milk
1 cup milk
3 tsp vanilla extract
Combine all the ingredients together in a large bowl.
Fill the cylinder of ice cream freezer 2/3s full; freeze according to manufacturer's directions. Refrigerate the remaining mixture until ready to freeze.
Let ripen in the ice cream freezer or to firm up in the refrigerator freezer for 2 to 4 hours before serving. Remove from the freezer 30 to 45 minutes before serving.
Note: Use fat-free yogurt and milks for a tasty light dessert.
Yield: 1 1/2 quarts
1 block (8-oz) cream cheese, softened
1 jar (6-oz) peach baby food
1/2 tsp ground ginger
1/4 tsp ground nutmeg
1 can (21-oz) peach pie filling
1 can (15-oz) fruit cocktail, drained
1 can (11-oz) mandarin oranges, drained
1/4 cup crushed pineapple
1 tub (8-oz) frozen whipped topping, thawed
1 cup miniature marshmallows
1/2 cup chopped walnuts or pecans
additional whipped topping for garnish
12 long-stemmed maraschino cherries for garnish
12 mint sprigs for garnish, if desired
In a large mixing bowl beat the cream cheese until smooth. Add the baby food and spices; mix well. Stir in the pie filling, fruit cocktail, oranges, and pineapple. Gently fold in the whipped topping, marshmallows and nuts. Cover and refrigerate overnight.
To serve, place into individual serving bowls and top with an additional dollop of whipped cream and a long stemmed maraschino cherry. Add a sprig of mint, if desired.
Yield: 12 servings
1 block (8-oz) cream cheese, softened

1/3 cup whipping cream
2 teaspoons lemon zest
1 1/2 cups fresh hulled strawberries
3 graham crackers, chopped coarsely
In a large mixer bowl, mix the cream cheese, milk, whipping cream, and lemon zest until well blended. Freeze until almost solid, approximately 4 hours.
Beat the frozen mixture with electric mixer until creamy.
Blend the strawberries in blender until smooth; add to he cream cheese mixture with the graham crackers and mix well. Freeze for 8 hours or until firm.
Remove from freezer 15 minutes before serving. Ice cream needs to soften slightly before scooping out to serve.
Yield: 6 to 8 servings
